Rain Baby

Rainy Thursday.  I've been wanting it to rain for the longest longest longest time.  Sigh.  It's so nice to have some colder weather...and wet.  I love wearing my boots!

Climbed out of bed fairly early this morning, excited to go workout at the gym.  It feels soooo good to workout and I'm pushing myself harder than ever.  Getting stronger!

Decided to make a pot of homemade chicken and rice soup today and that's simmering in the crock pot now.  Filling the house up with a delicious aroma.  It's going to be some homemade goodness.  I'm not following a recipe, just winging it, which is what I normally do with soups and stews.  I usually (not always) use what I have on hand in the pantry and frig.  Afterward, when it's one of those really awesome dishes, I usually will ask myself, 'Okay, now what did you put in there?'  And I have to grab a notepad to write down the list of ingredients I used as I'm eating it.  That happened recently when I made a pot of chili beans.  I only used a small handful of things and it turned out super duper good.  Michael said not to forget that one and so far, I haven't.

Can you believe next week is Thanksgiving?

Ninja Cooking System

Link Here.
My daughter and son in law had us over for dinner recently and they cooked chicken tacos in this cook system.  I was curious because I'd never heard of it.  It sounded like a good product and my daughter likes hers.

I went on Amazon the other day and ordered one.  Tonight I'm cooking in it for the first time, making Lemon Rosemary Chicken.  It has stove top saute, steam, bake, and buffet warming.  You can layer meals, such as cook your meat, vegetables and rice all in one.

So far, it smells really good and I'm cooking a 6 pound chicken in 1.5 hours.

Oh, one thing I should warn you about if you're thinking of getting one.  You really need to have the unit somewhere that the steam rising from the vent has free room to travel upward.  Otherwise, you'll end up with a dripping wet mess under the kitchen cabinets like I did and had to turn it off, unplug it and move it to the kitchen table.

Morning Hillside Hike

See the trail going straight up to the right of the tree?  That's the trail I like to take and Mike takes the one that goes off to the left and we meet at the top.  I love to climb the steep ones.

The sky was full of clouds and the hillsides were golden.
